Dried Cherry Burgers

Recipe by Leah Koenig, The Hadassah Everyday Cookbook

1 lb ground beef or turkey
1/4 cup minced shallots
1/4 cup dried cherries or cranberries, finely chopped
1/2 cup breadcrumbs, preferably whole wheat
1 clove garlic, minced
2 Tbs chopped basil
1 Tbs balsamic vinegar
2 tsp Dijon mustard
Salt and freshly ground black pepper
Hamburger buns
Garnishes (optional): ketchup, citrus marmalade, sweet onion slices, lettuce

Preheat outdoor grill or grill pan to medium heat. In a large bowl, combine beef, shallots, cherries or cranberries, breadcrumbs, garlic, basil, vinegar, mustard and salt and pepper to taste. Mix thoroughly with hands.

Divide mixture into 4-6 portions depending on desired size and form into patties; make a slight indentation in the center of each to stop the patties from puffing up while cooking.

Grill patties until brown and cooked through, about 5 minutes per side, or according to your desired doneness. Place on a toasted bun and top with any garnishes you desire.
