London Broil with Summer Fruit

  • London Broil sliced into cubes or stew meat of any kind
  • 2-5 cloves of fresh garlic
  • 1-2 stalks fresh lemongrass
  • 4 peaches
  • 4 tomatoes
  • 1 eggplant
  • At least two tablespoons toasted sesame oil
  • 1 tablespoon olive oil

Slice the London broil into cubes or take the pre-sliced stew meat and brown in a pan. Remove, drain the fat from the pan if you wish, and add a bit of olive oil. Brown sliced fresh garlic and lemongrass, and then add in cubes of eggplant. Cook until the eggplant is soft, and then return meat to the pan. Cook the meat until it has almost reached your desired level of doneness, and then add sliced fresh peaches and tomatoes. Add toasted sesame oil to taste. Serve with brown rice.
