Sweet Potato Sausage Soup

  • 7 cups chicken broth
  • 7 oz sliced Sausage (Mild or Spicy Chorizo, or sausage of your choice)
  • 2 carrots, peeled and chopped
  • 1 onion, chopped
  • 3 sweet potatoes (about 1 3/4lbs), peeled and chopped
  • 2 garlic cloves, minced
  • 1 tsp curry powder
  • 1/2 tsp crushed red pepper flakes

Put all ingredients in crock pot.  Cook on low for 6-8 hours.  Adjust seasonings and serve.

    I made something similar but added a can of rinsed white beans in the pot and added a few handfuls of baby spinach and the end. YUM! I also browned the sausages first and added them to the pot last (so that they would be on top) and added a dash of smoked paprika before serving. This is my new go-to prepped on Thursday night Shabbat meal to cook while I’m at work on Friday.
