This is a one-pot wonder that is filling, healthy and very easy to make. Not to mention forgiving!
Saute 1 onion, finely chopped, and some garlic (1-2 cloves, to taste) in a medium saucepan until translucent. Add 1 cup lentils, saute 1 minute. Add 1 quart Chicken Broth, bring to a boil, then simmer uncovered on low until lentils are fully cooked, about 20 minutes. Add more water if needed to thin broth. Serve with a squeeze of fresh lemon juice and chopped cilantro (optional).
