Crescent Steak

Recipe by Moses Wendel- Pardes Resturaunt.

Ingredients:

Puree one cup EVOO with 1 tsp fresh ground pepper and 1/2 bunch thyme. Marinate steaks 4 hours to overnight. Season with salt just before grilling. Grill to rare-medium rare. Serve with grilled corn and potato salad.

      Thanks for writing! If you don’t have a grill, go ahead and cook your steak in a cast-iron pan, oven, or follow these instructions below. Either way, you’ll want to keep a close eye on the temperature of the steak–steak at 125F will be medium rare. We hope that you enjoy the steaks, and please be sure to let us know what you think.

      Preheat oven to 400° and drizzle some olive oil in the bottom of a roasting pan. Heat two tablespoons of olive oil in a large heavy skillet over medium-high heat. Reduce heat to medium and add 1 steak to skillet. Cook until seared and golden brown on all sides (including edges), 2–3 minutes per side. Transfer steak to prepared roasting pan. Pour out oil and wipe skillet with paper towels. Do the same with more oil and the next steak. Roast steaks in oven, turning halfway through cooking until an instant-read thermometer inserted into steak registers 125° for medium-rare, about 20 minutes, or to desired doneness.
