Chicken Chorizo Bake

  • 2lbs Grow and Behold Chicken Thighs
  • 1lb Grow and Behold Chorizo (spicy or mild), sliced
  • 2 medium sweet potatoes, cubed
  • 1 onion, diced
  • 1tsp cumin
  • 1tsp paprika
  • 1tsp garlic powder
  • 1/2tsp coriander
  • 1/4tsp turmeric
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • salt and pepper to taste
  • 1TBSP oil


  • Mix spices and oil, and coat the onions, sweet potatoes and chorizo in the pan
  • Place chicken thighs on top of the spiced veggie/chorizo mixture
  • Cook at 350 for ~45 minutes, or until the chorizo has browned and given off some fat, and the veggies are cooked through
  • Spoon off some of the fat at the bottom of the pan onto the chicken skin, and place back in the oven. Turn the temperature up to 400 and cook for another five minutes, until the skin is crispy. Remove from the oven and serve!
