Bacon-Wrapped Turkey Breast

Recipe by Naomi Heisler

  • 1 package Grow and Behold Beef Bacon
  • 1 Grow and Behold Turkey Breast
  • a few sprigs of rosemary, sage or thyme
  • one bay leaf
  • two medium sweet potatoes, diced
  • two medium onions, diced (or eight shallots, cut in half)
  • five cloves of garlic, left whole
  • one cup of Grow and Behold Chicken Broth
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)

  • Preheat oven to 325 degrees and place the sweet potato, garlic, onions and aromatics at the bottom of the pan, then pour in the chicken broth
  • Place the turkey breast skin side down atop the vegetables (the bacon will keep the top side moist, while the skin will flavor the veggies at the bottom
  • Layer the strips of bacon on top of the breast and bake covered until the inside of the breast has reached 165 degrees
  • Let cook another five minutes uncovered, so the bacon can crisp up
  • Remove herb stems and bay leaf. Slice and serve as soon as possible
